GINGERBREAD SMOOTHIE (serves 1)
200-250ml coconut or almond milk
1 large frozen banana (or 2 small ones)
1⁄4tsp ground ginger
1⁄4tsp ground nutmeg
1.5tsp ground cinnamon
1/2tbsp almond butter
- Blend everything together until smooth.
- I start with just 200ml coconut milk and then add more if needed. How much milk you need depends on how big your banana is. You want this to have a little thickness to it.
- You can do the same with the spices, start with just a pinch -ginger and nutmeg are quite strong. Blend, taste a spoonful and add a bit more if you like.
- To make this into a healthy ice cream, just use less milk, I’d say about 50 to 100ml. Use a food processor if you have one so you won’t need as much liquid as in a blender. Serve with sliced or chopped almonds, chopped dark chocolate etc…
